Carrot Lox

A schmear replacement

Ingredients

  • 4 carrots, boiled for eight minutes and cooled
  • 2 tablespoons caper brine (the liqued from a jar of capers)
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste (optional but recommended)
  • 1 tablespoon olive oil
  • 2 teaspoons lemon juice
  • 2/3 cup water

Spices

  • 1 teaspoon chopped dill
  • 1 teaspoon smoked paprika

Instructions

  1. Slice the carrots into thin sheets or strips using a fine knife or vegetable peeler
  2. In a bowl, combine the remaining ingredients and add the carrots
  3. Marinate the carrots in the refrigerator for at least an hour - longer will yield a stronger flavor
  4. remove from marinate and serve. refrigerate leftover lox and use within a few days
