Carrot Lox
A schmear replacement
Ingredients
- 4 carrots, boiled for eight minutes and cooled
- 2 tablespoons caper brine (the liqued from a jar of capers)
- 2 tablespoons soy sauce
- 1 tablespoon miso paste (optional but recommended)
- 1 tablespoon olive oil
- 2 teaspoons lemon juice
- 2/3 cup water
Spices
- 1 teaspoon chopped dill
- 1 teaspoon smoked paprika
Instructions
- Slice the carrots into thin sheets or strips using a fine knife or vegetable peeler
- In a bowl, combine the remaining ingredients and add the carrots
- Marinate the carrots in the refrigerator for at least an hour - longer will yield a stronger flavor
- remove from marinate and serve. refrigerate leftover lox and use within a few days
