Dutch Oven Earthy stew
This is our general dutch oven stew recipe.
Ingredients
- 1 package of small potatoes (do not use purple fingerling potatoes)
- 1 cup baby carrots or diced carrots
- 1/2 cup of rice
- 3-4 cups of veggie broth
- 1 onion (diced)
- 7 cloves of garlic
- salt
- black cumin
- thyme (lots… like 1 tbsp of whole leaf, or 1/2 tbsp of ground)
- 1/2 tbsp Rosemary
Instructions
Using a cast iron dutch oven, get the coals ready and distributed on the bottom.
Saute the onion and then garlic.
Add the rest of the ingredients and place the top on the dutch oven.
Cook for 30 minutes and then carefully remove the lid and serve.
Notes
- This made quite a bit. For camping we should half it to reduce leftovers
Instant pot Cook for 5 minutes, let self release for 10 minutes
