Greens
Ingredients
- 2 jalapeno
- 1 can coconut milk
- 1 bunch mustard greens (or substitute Kale and add more mustard powder)
- 2 bunch spinach
- 1/2 onion
- 4 cloves of garlic
Spices
- 1 tablespoon cumin
- 1 tablespoon tumeric
- 1 teaspoon corriander
- 1 teaspoon salt
- .5 tablespoon mustard powder
- .5 teaspoon chili powder
- .5 tablespoon paprika
Instructions
Prep
- Destem the greens, keeping the stems and leaves separate for each type.
- IE, you should end up with 4 bowls, 1 for mustard green stems, 1 for mustard green leaves, 1 for spinach stems and 1 for spinach leaved.
- Roughly chop the leaves and stems.
Cook
- Add oil to skillet and fry onions
- add jalapenos and garlic and fry a bit
- add spices, mustard stems, and some coconut milk and cook for 5 min add mustard green stems
