Scrambled Tofu

This is a great replacement for scrambled eggs. It goes great with some air fried fingerling potatoes or hash browns and some sliced bell peppers.

Ingredients

  • 1 package of Firm or Extra firm Tofu
  • 1 tsp Oil (canola)

Spices

  • 3 tbs Nutritional Yeast
  • 1 tsp salt
  • 1 tsp Garlic Powder
  • 1 tsp Onion powder
  • 1/4 tsp Tumeric (Optional)

Instructions

  1. Press tofu.
    • Wrap tofu slabs in cloth napkin or paper towel. Place on a cutting board or other surface, and place a cast iron skillet, or something else with some weight on top for ~5-10 minutes
  2. Add oil to skillet, add tofu and mash up the tofu with a fork.
  3. Add spices
  4. Cook for ~10 minutes or until warmed

Notes

  • We usually double this recipe for the 4 of us.
  • I like it with tumeric. Tumeric is awesome, and adds a great yellow color to it. Too much though makes it off putting
